Jean-Anthelme Brillat-Savarin was an 18th-century politician and renowned gastronome. This triple-cream cheese was created in his honor.

Produced between Burgundy and Champagne, it has recently been awarded a protected geographical indication (PGI). Sometimes, to our great surprise, it is one of the cheeses that leaves the most lasting impression on our customers.

This is undoubtedly due to the cream with which it is enriched, which flatters the palate and stimulates the taste buds with its creaminess. Fresh and without a rind in its early stages, it then develops a surface bloom, which is white and smooth at first, then ivory and thicker. The paste is always immaculate white, the nose is very discreet, and the palate offers lactic notes of butter, slightly enhanced by fresh mushrooms when matured for a little longer. The latter mainly consists of developing the rind, which will eliminate the initial acidity.
