Its fragrance evokes the sun-drenched meadows of summer, subtle and charming in every way.
It was the harshness of the long Jura winters that, as early as the Middle Ages, led people to transform milk into a cheese that could be stored and would meet the needs of an entire family throughout the cold season. The Comté cheese that emerged from this process is now produced in cheese dairies or fruit farms.
We work exclusively with a select few dairies, all located in the Haut-Doubs region, whose "reserved" wheels are then left to mature for several months under the vaults of Fort Saint-Antoine. The Comté we offer is the quintessential mature cheese, to be enjoyed at the peak of its flavor. Few cheeses can claim such patience; most will simply age, while a select few truly mature.
Generally produced in the spring or summer months, it has a beautiful yellow paste beneath a rind that is beginning to lose its smooth finish. Its aroma evokes the sunny meadows of summer, subtle and charming in every way. On the palate, the paste is initially firm, then soft, even brioche-like after a short while. The notes are buttery and floral, with a hint of cream and hazelnuts.
However, it is difficult to establish a specific framework for all its aromas here, as each wheel is unique, as it should be for a true artisanal product.
